Making the following recipe will result into a side dish that goes perfectly with any fare.
lb. of potatoes, peeled, sliced at about ½ inch and covered with cold water
cup of olive oil
medium onions, sliced
oz. grated pecorino cheese
cup chopped parsley
Drain the potatoes and pour into a large tureen; add ½ of the olive oil, onions, ½
of the cheese, parsley and salt and pepper to taste. Combine the ingredients well and transfer half of the
mixture into an oiled medium size pan, sprinkle some cheese, pour the remaining potatoes and top with the
remaining cheese and olive oil.
Cover with aluminum foil and bake at 400 degrees for 45 minutes and for an
additional 15 minutes uncovered. Test if they are sufficiently cooked and if necessary bake the potatoes a
few additional minutes.
